dc.description.abstract The pumpkin (Cucurbita moschata, L.) is a vegetable of the family Cucurbitaceae. Pumpkin seeds are pumpkin pieces which are usually discarded by consumers, but which exhibit properties which are capable of providing health benefits. The objective was to quantify the total phenolic content of pumpkin seeds extracts and evaluate the antioxidant capacity in vitro by radical capture reduction methods DPPH (2,2- diphenyl-1-1picril-hydrazyl) and ABTS+ (2,2-azino-bis (3-etilbenzotiazolin) -6-sulfonic acid) compared to the extracts. The study of the antioxidant potential and the total phenolic content was performed with aqueous extract, alcohol and acetone. The results showed a good amount of total phenolic 82.48 mg GAE / 100g for the alcoholic extract and 102.36 mg GAE / 100g in pumpkin seed for the acetone extract. dc.description.resumo A abóbora (Cucurbita moschata, L.) é uma hortaliça da família Cucurbitaceae. As sementes de abóbora são partes da abóbora que geralmente são descartados pelos consumidores, mas que apresentam propriedades que são capazes de proporcionar benefícios à saúde. O objetivo do trabalho foi quantificar os fenólicos totais dos extratos de sementes de abóboras e avaliar a capacidade antioxidante in vitro pelos métodos de redução de captura de radicais DPPH (2,2-difenil-1-1picril-hidrazil) e ABTS+ (2,2-azino-bis (3-etilbenzotiazolin)-6- sulfônico) frente aos extratos. O estudo do potencial antioxidante e o teor de fenólicos totais foi realizado com extrato aquoso, alcoólico e acetônico. Os resultados apresentaram uma boa quantidade de fenólicos totais, 82,48 mg EAG/100g para o extrato alcoólico e 102,36 mg EAG/100g na semente de abóbora para o extrato acetônico. A capacidade antioxidante pelo método DPPH apresentou valores de 1,67 e 1,40 mM/g de Equivalente Trolox para os extratos alcoólicos e acetônico, respectivamente. Já pelo método ABTS+ tiveram os valores TEAC de 21,47, 22,16 e 19,56 mM/g de equivalente Trolox para os extratos alcoólicos, acetônico e aquoso, respectivamente.
