Comida e cultura: um dialogo culinário através da cozinha piauiense

Abstract

The Culinary of Piaui is a mix of traditions and habits heir from its founding citizens and imigrants from other regions that had arrived and changed the way of eat, cook and feed. This research presents a brief study about this evolution, observing the main characteristics found on its population and the alterations perceived trough the gastronomic system globalization. Its important to realize the dimension of the culinary of Piaui in the construction of its own culture, the food among all other influences that the culinary has changed, had influence in its cultural formation, reaching from traditional superstitions to cultural receptuary and food from people who has moved here or just passed trough leavin its own cultural influences mixing ther habits to the ones found locally. To understand the culinary of Piaui its necessary to know its own historical facts, the heritage of the local cuisine, left from indians,portugueses and africans, as other factors that had influence over the local culinary formation. This study aims to awake the atention to the food culture, showing that a simple meal can change into a poetic moment, affective and the fountain of descovery of what are we really made. Its noted at the end of this research that even with regional similarities its possible to characterize the culinary of Piaui respecting its boundaries and observing paralels between neighbours regions and others
